1 x Blackened Cod & Trinity Couscous Dinner (serves 1-2)
Fun Fact: Traditional French mirepoix uses carrots. However, when French Acadian settlers (Cajuns) arrived in Louisiana, carrots were difficult to grow in the swampy, humid environment. Bell peppers were much more reliable and readily available, so they became the permanent substitute. The Louisiana Mire Poix is traditionally referred to as "The Trinity".
